Major Changes to Deerfield’s Culinary Services

On July 1st Deerfield rolled out the early stages of our dining partnership with Sodexo. This process, central to Deerfield’s mission, will benefit the health and well-being of our residents as well as our staff.

Founded in Marseille, France, in 1966 by Pierre Bellon, Sodexo is the global leader in services that improve Quality of Life, an essential factor in individual and organizational performance. Operating in 56 countries, Sodexo serves 100 million consumers each day through its unique combination of On-site Food and Facilities Management Services, Benefits & Rewards Services and Personal and Home Services. 

This has been a long and thoughtful process led by Director of Resident Services Taryn Tindall and the senior leadership team, with the help of the Residents Council and Dining Committee. In preparation for the July 1st rollout, Sodexo’s transitional team worked side-by-side with staff, providing encouragement, training, and implementing new processes. This team will continue to assist in the coming months.

Residents love the changes. One long-time resident says, “The new Bistro is beyond fabulous!!!”

What’s new? The Bistro has been transformed into a modern multi-station experience. There are 4 stations (including desserts). Station 1 features a theme that will change every few days to ensure variety and offers dishes that are made to order. Residents will always be able to choose from vegan to comfort food options. These changes in menu and options are also being implemented in Deerfield’s Assisted Living and Skilled Nursing kitchens.

Residents and staff love the transition to new uniforms, upgraded equipment, and attractive small wares. We are changing the way we think about dining at Deerfield, as well as the way we talk about it. From now on, we will be talking about Culinary Services led by a magnificent Culinary Team.

Looking Forward
The rollout will continue throughout the fall and winter of this year with introduction of:
• Visual touchscreens and kiosks.
• Flexible dining plan.
• Waste reduction tools and protocols.
• Riverwalk Café will become an epicurean deli while continuing to serve long-time favorites.
• Snacks and small plates at Canon’s Corner.
• Reopening Canterbury Room for fine dining.
• Hydroponics, culinary events, and nutritional programming.
